FABES CON ALMEJAS | SPANISH CLAMS AND WHITE BEAN STEW

This is another splendid example of how to prepare a good beans stew and just in 10 minutes. Watch out for a good quality clam and pamper the beans, it is worth it.

 INGREDIENTS

  • 500g jar of cooked Fava beans, rinsed

  • 500 gr of clams, cleand 

  • 1 pinch dried chilli

  • 4 cloves or garlic

  • A bunch of spring onions, roughly chopped

  • 25 ml of white wine

  • 1 tbsp of flour

  • 100g baby spinach

  • 400ml fish stock

  • Salt

  • Pepper

  • 50ml Extra virgin olive oil

Preparation

  1.  On a pot over medium heat with a little drizzle of olive oil add the chopped spring onions and fry for 1 minute, then add the finely chopped garlic, the chilli and after a minute the flour to form a roux. Stir it constantly for 2 minutes to toast the flour and add the white wine. Give it a good stir to prevent lumps from forming. 

  2. Add the fish stock and the rinsed white beans and bring it to the boil.  Season with salt and pepper, add the clams, spinach, the green from the spring onion and let it cooked until the clams open and the spinach wilts which should take about 2 minutes and serve.
