This ham comes from the famous Iberian pig, a breed commonly known as pata negra, or black foot. The dark red meat is lightly marbled with fat, giving it a rich texture and a unmistakable flavour that will make your mouth water. Unlike the acorn-fed shoulder, this shoulder comes from pigs that were not raised on acorns, so it's a bit more economical, which turns it into the ideal buy before stepping up to the king of hams: acorn-fed bellota.
