It absorbs three times its volume in broth as opposed to the average rice grain, which absorbs only twice. This means it absorbs more flavour and does not stick together.

This bomba rice is grown in the La Albufera Natural Reserve in Valencia and has a “denominación de origen” status from the “Consell Regulador” (i.e, it’s quality is guaranteed).

“Socarrat” is the word for the delicious, crusty yet juicy layer of rice at the bottom of a paella pan when the heat is increased towards the end of the cooking time. Care must be taken however not to let the rice burn and no stirring!
