Pan-fried hake with stewed artichokes and clams in a saffron and hazelnuts sauce
I cooked this dish in March for the BBC1 TV show called Saturday Kitchen. I made it live in just 8 minutes, which tells you that if you are well organized this could be not just a delicious fish dinner to conquer your partner with, but as well it can be done in no time. It relies on the freshness of the fish which is in season right now and through to May.
Papas arrugadas con mojos
Dishes from the Canary Islands pop up every now and then in my family, particularly at my auntie’s house.
Tocinillo de cielo
A delicious baked egg yolk and caramel dessert. Tocinillo de cielo translates as ‘fat from heaven” and let me tell you: it is indulgent!
Pork shoulder with rice and chimichurri sauce
A super quick and easy recipe for when you need a good dose of protein and iron. We eat this at home every so often as it is delicious and we love the combination of chimichurri sauce with the red kidney beans and the rice.
lambs lettuce, black pudding and raspberries salad | Ensalada de Morcilla y queso
This salad came on a day of inspiration when I decided to try exactly what you can read and it tasted fantastic. We love eating salads all year around at home but during winter you feel less appealed to eating cold dishes in general so a warm salad is something to cheer for.
Baked Tomato and tuna pasta
Some days you just need a good plate of pasta and what I like about this one, is the fact I can cook it whenever is convenient for me (like when I need a break from the computer when working from home) and leave it in the oven ready for later whenever we are starving.
Miso aubergines and courgette with rice
I don’t think I have ever been in a Japanese restaurant and not ordering Miso aubergines. Their flavor is so addictive and Moorish that when you finish them as a starter you feel like you want more.
Spanish Creamy Mushrooms Rice
Italian risottos have taken the fame when talking about cooking rice at home, but in Spain, we cook it very similar yet healthier, without the need of using butter and cheese.
A Very Green and Non-Spicy Fish Thai Curry with Rice
For this recipe I removed some of the traditional ethnic ingredients used for it like fish sauce, fermented shrimp paste and palm sugar which unless you cook Thai curries once every two weeks I wouldn’t think you need them in your cupboard and I used simple everyday ingredients instead.
Cheese beetburger with roasted corn ribs
I must confess that I haven’t been very impressed with the vegetarian burgers I have tried in the last few years so I’ve put myself the challenge to create one that tastes just as good as some of my favorite beef burgers
Moorish chicken and butternut squash stew
This Moorish chicken stew it’s an absolute treat. It feels to me like the type of dish that is served on a family gathering, something that feels a bit more special than an everyday meal. As well it has the right balance of meat, veg and carbs accompanied by a super fragant and deliciously sticky sauce.
Vegan lentils stew
It is traditional to make lentils stew with plenty of cured meats in Spain but at home, we frequently cook them only with vegetables so they are lighter and less fatty but still full of flavor. This dish is so healthy and nutritious and we should all be eating it very often, so enjoy!
Spanish chorizo and potatoes stew
This stew is rich in flavor and is the perfect comfort food, warming and perfect for any winter day. La Rioja, where the famous Spanish wine comes from, is an incredibly fertile area where some of the best fruit and vegetables in the Iberian Peninsula are grown (and that is a big statement).
Meatballs in tomato sauce and roast potatoes | Budget family meals
I’m launching a new series on my YouTube channel to help families cook nutritious, wholesome and affordable everyday meals for just £1!
Eel, potatoes and paprika stew | All i pebre
I first tried this dish in a restaurant years ago and fall in love with it. It is not a dish that Spaniards come by often as it is a very regional dish from Valencia, the type that didn’t travel, it stayed in the region.
